Stay Healthy 5-Ingredient Chicken Enchiladas

Cooking healthy never got simpler than these 5-ingredient enchiladas full of muscle building protein and flavor. This meal is ready in literally minutes and will have you the talk of the dinner table or party. Cooking at home is an important part of adopting a healthy lifestyle and being in control of what you are eating. Start with easy meals like this one and expand as you go. Enjoy and Stay Healthy!

Preheat oven to 350

3 prepared and fully cooked chicken breasts, shredded

1 small can diced green chilies

1 large can enchilada sauce (choose your heat)

1 package organic large white corn tortillas (at least 10)

Shredded organic sharp cheddar cheese, shredded

In a large rectangle baking dish, pour enchilada sauce in bottom, about ¼ can. Start dipping tortillas in the sauce until covered and stack on one side of the pan. More sauce may have to be added as you work. This is a fun, messy, all-by-hand cooking project. Grab some shredded chicken and place in center of tortilla, add a little green chilies and shredded cheese to your liking. Roll up tortillas and place on opposite side of pan seam side down. Continue to stuff and press rolled tortillas against each other. You will run out of room and need to place tortillas on top of completed enchiladas. Continue this process until pan is full of completely rolled and stuffed enchiladas. Pour more sauce over the enchiladas and shredded cheese. Bake uncovered for about 20 minutes or until cheese is melted and bubbly. Garnish with fresh avocado and plain Greek yogurt.
